Bulgarian-style brine-aged cheese wheel with crumbly texture and a salty, moderately sharp flavor. Packaged in brine and continues to age in package. Sized in approximate 8 oz. wheels.
The 93 acre Linden Dale Farm was originally established in 1797 by Isaac and Marie Feree and bought by John Mellinger in 1816, and to this day has farmed and operated in the family for seven generations. Ten years ago, Andrew and Mary Mellinger along their children initiated the transition from cows to goats, as well as adding a milk processing facility. The farm continues to provide all of the feed and pasture for the goat herd. Linden Dale Farm cheese is made from milk solely produced from the Mellinger goat herd, making it a true farmstead dairy.
